I love to have healthy snacks on hand to grab throughout the day. One of my go-to favorites is sweet potatoes.
I also love to batch cook so I’m not always in prep mode when i get hungry. So every week or two I roast 3 or 4 sweet potatoes and enjoy them for days. 🍠
I vary the shape and size of the cuts… sometimes rectangular like these, sometimes round discs. The shape is irrelevant. But I like variety! 😂 🍠
Simple cooking instructions:
Wash them thoroughly (leaving skins on)
Slice ‘em up
Place cuts in a large bowl
Toss with oil (EVOO or Avocado)
Add Garlic Salt
Possible other toppings: cayenne pepper, pepper 🍠
Roast at 400 ‘F for 20 minutes. Flip them over. Roast for an additional 20 minutes. (This will give you well-done, crispy potatoes. Reduce cooking time for less well-done results). 🍠
Store left-overs in a covered container for later consumption!
