I love to have healthy snacks on hand to grab throughout the day. One of my go-to favorites is sweet potatoes. I also love to batch cook so I’m not always in prep mode when i get hungry. So every week or two I roast 3 or 4 sweet potatoes and enjoy them for days….

Feel The Roast!

Today I asked my body what it needs, and got a resounding answer:
“roasted vegetables!” So I headed off to the market to fill my sack with loads of goodies to pop in the oven and roast.
